Banana Batter Bread

In addition to being easy, this combination of sourdough, bananas, and nuts results in a pleasing and unusual texture.

    Ingredients

    • Basic Sourdough Batter (is under the recipes tab)
    • 1 egg, beaten
    • 1 cup mashed banana
    • 1/2 cup sugar
    • 1/2 cup chopped nuts

    Baking

    Combine the sourdough batter, egg, banana, sugar, and nuts in a large mixing bowl and mix well.

    Spoon the batter into two 8 1/2 by 4 1/2 by 2 1/2 inch pans.  Cover lightly with plastic wrap and proof 3 hours at room temperature or 1 to 2 hours in a proofing box at 85 degrees, or until the dough rises 1/2 inch above the pan tonps.

    Bake in a preheated oven at 350 degrees for 45 minutes.  Remove from the pans and cool on wire racks.
