Some of the moste asked questions, I will try to answer here.
- For some reason our cultures sometimes react with the flour they are started in. Our cultures love Gold Medal Unbleached All Purpose flour. This is an easy fix if your culture does not seem to be working correctly.
- The temperature is an important factor. The cultures do best in 70-73 degrees. Lower or higher temperatures tend to affect how they activate.
- The cultures should be the consistency of pancake batter.
- The lid on the quart mason jar should be on snuggly. I have found that the gasses help the activation process.
- Also, if the culture is being slow, feed every 12 hours instead of 24.
