When I first started with sourdough, I have to admit it was very daunting. I picked up the instructions several times, just to put them back down. I am not a baker. I am not even a semi ok cook. So this was all overwhelming for me. Finally I just gave in and gave it a go. I have to say it was easy. I have done about everything you can do to kill a starter and have yet to throw one away. I think sometimes we tend to overthink this process. The one thing that I have learned is that temperature is important! Consistency is also a factor. And sometimes patience is required. I was also worried that I would have to feed this starter of mine every day and get someone to watch it if I couldn’t. Another wrong in the information department. The refrigerator is my friend. My best hint for you is to keep a notebook. Write down what works, what doesn’t, what you didn’t like, what you did and what you would change. I always think I will remember but that has never been the case. Take the leap and activate that starter! You will love the taste and all you can do with it. Happy baking.
